1, 2, 3 White Rum Cocktails

Another week down. I hope everyone is staying well. What have you been doing to pass the time?
Fortunately, its Friday which means its cocktails time!
This weeks 1, 2, 3 will be looking at White Rum. I didn't include a daiquiri or its common variants, but being honest this blog isn't far off being called 1, 2, 3 Daquiri's.
With that said let's get on with it!

Canchanchara
Glass: Rocks
Method: Shake and strain
Ice: Cubed
Garnish: Scorched Lime wheel
Ingredients
60 ml White Rum
15ml Lime Juice
20 ml Honey Syrup
Add all of the ingredients to your shaker and shake for 8-10 seconds.
Fine strain into a short glass over fresh ice.
Note: For the honey syrup combine 3 parts honey, to 1 part water and stir to incorporate.

Bacardi Special
Glass: Coup/ Martini
Method: Shake and Fine strain
Ice: None
Garnish: Maraschino Cherry
Ingredients
45ml Bacardi Carta Blanca
22ml Gin
15ml Lime juice
7ml Grenadine
5 ml Sugar Syrup
Add all of the ingredients to your shaker and shake for 8-10 seconds.
Fine strain into a chilled coup.
Old Fashioned Daquiri

Glass: Rocks
Method: Stir and strain
Ice: Large Cube
Garnish: Scorched Lime Wheel
Ingredients
60 ml White Rum
Fat Barspoon* of sugar syrup
2 dashes Lime bitters
Add all of the ingredients to your stirring glass and stir until very cold.
Strain into a rocks glass with a large cube if possible. Pull out your clear ice here if you have it.
*Fat just means a slight over pour of the measure. So a little bit more than a barspoon.
To my understanding, this mostly appears in American recipe's where they measure in ounces, and so the difference between 1 oz and 1.25 oz would be a "fat ounce" and very possibly a "scant ounce and a quarter". God bless the metric system.

Angels Draft
Glass: Coup/ Martini
Method: Shake and Fine strain
Ice: None
Garnish: Grapefruit Twist (discarded) and a mint leaf
Ingredients
45ml White Rum
15ml lime juice
7ml Agave Syrup
1 dash Grapefruit Bitters
3 mint leaves
1/2 an egg white
Add all of the ingredients to your shaker and shake for 8-10 seconds then fine strain back into your shaker and dry shake (without ice) to emulsify the egg white and pour into your chilled coup. Twist the grapefruit peel over the drink and then discard.
Don Daisy
Glass: Coup/ Martini
Method: Shake and Fine strain
Ice: None
Garnish: Lemon Zest
Ingredients
45ml White Rum
15 ml Elderflower Liqueur
15ml Dry Vermouth
7 ml Lemon juice
7 ml Sugar syrup
1/2 an egg white
Add all of the ingredients to your shaker and shake for 8-10 seconds hen fine strain back into your shaker and dry shake (without ice) to emulsify the egg white and pour into your chilled coup.
Optimist
Glass: Flute
Method: Shake and Fine strain
Ice: None
Garnish: Grapefruit twist (discarded)
Ingredients
50ml White Rum
30ml Fino Sherry
15ml Lime juice
20ml Sugar Syrup
2 dashes Peychaud's bitters
Add all of the ingredients to your shaker and shake for 8-10 seconds.
Fine strain into a chilled flute. Twist the grapefruit peel over the drink and then discard.
